Gajar ka Aachar ( Carrot Pickle )


One More Without Oil Pickle Recipe !!!!


Roasted and powdered Mustard Seeds
Roasted and powdered Fennel seeds
chili powder
Asafoetida (Hing)


Peel the carrots and thinly slice them about 2 inches long. Let them dry naturally. If its a sunny day then it will take 2-3 hours to dry otherwise you can keep it for a day.Once the carrots are dry add salt ,fennel seeds powder , Mustard seeds powder and a Pinch of Asafoetida and half table spoon turmeric.Mix all the ingredients together with the carrots and put in a glass jar.
Keep the jar in the sun for a day. Pickle is ready the next day.
Pickle can be refrigerated for about two weeks.
