It’s New year so we thought to start this new year with something sweet. I prepared Kheer on this special occasion. Kheer is prepared by Indians in festivals, temples, and all special occasions . Here is the recipe !!
Let me warn you first…. It takes lots of time to cook ,More than an hour I would say and you can not take rest in between. Have to stay there in kitchen stirring stirring n lots of stirring !!!
1/2 cup rice
1 liter whole milk
3/4 cup sugar (adjust to taste)
6 strands of saffron
Pinch of crushed cardamom
1 tablespoon raisins
2 tablespoons sliced almonds
1 tablespoon sliced pistachios
1 teaspoon Ghee
Use a non-stick frying pan to make kheer.
Wash rice and soak it in hot water for sometime and drain later.
Melt the Ghee in a frying pan on medium heat and stir fry the dry nuts and keep aside.
Take 2 spoons of hot milk in a cup/ bowl and add saffron strands in it and keep aside until milk color is changed.
Now take 1 liter of milk in a thick Pan and add drained rice in it.
cook until the rice is tender and the milk is creamy and reduced to about half. keep Stirring to ensure the milk does not burn in the bottom of the pan.
Add the sugar, saffron milk (that was kept in a bowl), cardamom, almonds and pistachios and let simmer for a few more minutes.
Turn off the heat.
As kheer cools of will become thicker in texture.
Kheer can be served chilled or warm.
